The pinnacle of the Sorby Adams Wines collection, The Thing is our icon Shiraz.
The Thing is where Simon Sorby Adams’ mastery of bringing winemaking, oak and region together truly shines.
Sourced from low yielding hand pruned Barossa Shiraz vineyards dating back to the 1930s, these ‘survivor’ vines have incredible quality and structure.
Its traditional blend of 80% Eden Valley and 20% Barossa Valley fruit seamlessly combine to create a wine with elegance and power, and impeccable ageing potential.
Spending 40 months in four year, air dried, fine-grained French oak provides sophisticated structure and tannins, whilst retaining fruit complexity and richness.


Weathered Oak
Simon Sorby Adams’ approach to the judicious and bespoke use of oak in his winemaking style dates back to when he was Yalumba Chief Winemaker from 1980 to 1999 (Hill-Smith Family Estates), and crafting The Octavius, The Signature and The Reserve 'Rare & Fine' wines.
The typical airing time for oak is two to three years, but back then Simon experimented with airing spells that lasted up to eight years.
Today, Simon uses an air-dried weathering phase of both eight-years andfour-years for his Sorby Adams wines, with Stillers Barossa, Francois Frere and Taransaud his chosen Coopers.
This use of extended air-dried fine grain French and American oak ensures red wines are made with distinct flavour and impeccable ageing potential.
